  • Besan – 30 g
  • Paneer – 30 g, crumbled
  • Cheese – 1 slice
  • Butter – 5 g
  • Mixed vegetables – 50–70 g (onion, tomato, capsicum, carrot, spinach)
  • Spices – cumin, chilli, turmeric, black pepper, salt
  • Water – as needed

Method

  1. Mix 30 g besan with water to make a smooth, medium-thick batter.
  2. Add chopped vegetables and spices.
  3. Heat a non-stick pan and spread the batter into a thin chilla.
  4. Cook until the base becomes golden.
  5. Add 30 g crumbled paneer and 1 cheese slice over half of the chilla.
  6. Fold and cook until the cheese melts and the chilla is crisp.
  7. Finish with 5 g butter and serve hot.

  • Besan (gram flour) – 50 g

Method

  1. Mix 50 g besan with spices, salt and a little water to make a firm dough.
  2. Shape into small flat pieces or bite-sized nuggets.
  3. Lightly brush or spray with some of the 10 g oil and air-fry at 180°C for 10–15 minutes, turning once, until golden and firm.
  4. Heat the remaining oil in a pan and sauté onion, tomato, ginger-garlic and spices.
  5. Add vegetables and cook until slightly tender.
  6. Add water to make a light curry and simmer for a few minutes.
  7. Add the air-fried besan pieces and simmer for 2–3 minutes so they absorb the curry.
  8. Garnish with coriander and serve hot.
